The sweet apple flavours from the Mad Jack are a nice balance to the acidity and spice from the salsa.
- 4 fresh tomatoes, diced
- 1 red onion, finely diced
- 1 jalapeño pepper, seeded and finely diced
- 1 clove of garlic, finely diced
- 2 limes, juiced
- 2 tbsp. (30ml) extra virgin olive oil
- ½ cup (120g) cilantro, finely chopped
- Kosher salt and freshly cracked black pepper
- Combine ingredients in a mixing bowl, season to taste with salt and pepper and let sit for at least an hour in the fridge before serving.
